Another What We Eat in a day post!
With a newborn around it sure is hard to get anything done, thank goodness the hubby had the day off. I actually had time to make a real dinner, using both hands!! Most of the time I’m strapped to a newborn, entertaining a toddler and making dinner all at once, ahhh momlife.
8:00am – Today’s easy breakfast was yogurt with my Homemade Granola, fresh fruit and hemp hearts! My 2 year old doesn’t have any dairy issues and we do eat dairy from time to time but today we opted out for plain dairy free coconut yogurt.
The toddler gobbled down the whole bowl and most of the fruit on the side. I know I can always count on this breakfast as its one of her favorites. She actually thinks this is a treat!
11:00am – Early lunch on the menu! Fruit and yogurt in the morning aren’t exactly the most filling options so lunch was served extra early. The kiddo had a hummus and spinach quesadilla with a little bit of chopped veggies on the side. I used a gluten free wrap with homemade plain hummus. Hummus goes great in quesadillas, it’s a great alternative to real cheese.
I on the other hand had a chopped salad with avocado dressing. I’m trying to eat a lot of healthy fats since I’m breastfeeding, so I chopped up a whole big avocado and used it as dressing. Here’s what went in: tomatoes, cucumber, baby spinach, red onion, chickpeas, olives and hemp hearts. For the dressing I mashed up an avocado with lime juice, salt and pepper.
Both the kid and I cleaned up our plates, this was such a good salad.
2:00pm – Since we had an early lunch I though a nice coconut party would hit the spot. I popped open a couple coconuts, scooped out the meat, drank the delicious water and served the coconut meat with a juicy mango.
This is the kiddos all time favorite snack! If you haven’t had fresh coconut I highly recommend trying it out. It is sooo good for you.
6:00pm – Turkey and mushroom meatballs with broccoli and potato mash. For the side I steamed up a few beats, shredded them and added salt & pepper. Since my lunch salad was so dang tasty I made it for dinner too!
If your kids like mashed potatoes adding steamed broccoli is a perfect way to add veggies to their diets. I also like to mash cauliflower with potatoes and sprinkle it with nutritional yeast.
Dinner has been a struggle at the house lately the kiddo doesn’t really want to eat much. She ate up her potato mash and the salad, had a couple bites of the meatball, and one bite of the beats.
8:30pm – The kiddo went to sleep so I treated myself to a lil snack before I hit the sack. Dates with peanut butter, a sprinkle of Hemp Hearts and a mug of hot tea. This is becoming a daily treat at the house. If I’m offering this as a snack/treat for the toddler I like to make it in the afternoon, even though dates are low on the glycemic index the natural sugars in dates would give the kid a little too much energy before bed. So I had this lil snack all to myself.
Here is the mix I’ve been drinking everyday! Dandy Blend coffee (gluten free and no caffeine, great coffee substitute for the breastfeeding or pregnant mamas) I make a cup of this, add a scoop of Collagen, and a couple good glugs of almond milk.
